Chow-Chow Relish

4 cups chopped cabbage (1 small head)
3 cups chopped cauliflower (1 medium head)
2 cups chopped onions
2 cups chopped green tomatoes (about 4)
2 cups chopped sweet green peppers (2)
3 tablespoons salt
2 1/2 cups vinegar
1 1/2 cups sugar
2 teaspoons dry mustard
1 teaspoon turmeric
1/2 teaspoon ground ginger
2 teaspoons celery seed
1 teaspoon mustard seed

Combine chopped vegetables; sprinkle with salt. Let stand 4 to 6 hours in a cool place. Drain well. Combine vinegar, sugar and spices; simmer 10 minutes. Add vegetables; simmer 10 minutes. Bring to boiling. Pack, boiling hot, into jars, leaving 1/4-inch head space. Adjust lids; process 10 minutes in a boiling-water bath. Makes 4 pints.

  1. alot of people do not know what chow-chow is so you need to put some use for it. you can use it in place of relish on hot dogs and hamburgers but the one that gets the most compliments from my family is deviled eggs.
    first i put the eggs in a pan and cover with cold water. then i bring to a boil and cover and let simmer 10 minutes. run cold water in to the pot until cool enough to touch. peel eggs. cut in half length wise putting yoke in a seperate bowl. if any egg get to torn up while peeling put white and all in bowl. then smash the yokes with a fork until crumbly and salt and pepper to taste. next i don't measure but spoon mayonasise until creamy. a squit of mustard and about 2 spoonfulls of chow-chow. add more of anything you need. spoon into eggs and sprinkle with paprika.

  2. You can put chow-chow in any recipe that calls for relish. Also, my son likes to eat it on corn chips in place of salsa.
